Variability of Bioactive Substances in Potatoes (Solanum Tuberosum L.) Depending on Variety and Maturity

Potatoes (Solanum tuberosum L.) are an essential food for the human diet and thus represent important source of biologically active substances. This study aimed at investigating content bioactive substances (total anthocyanin polyphenol contents chlorogenic acid) in seven potato varieties (Belana, Cecile, Magenta Love, Mozart, Talentine, Toscana, Violet Queen) with various flesh skin colors. To evaluate impact maturity on analyzed parameters, samples were harvested two different periods (1st harvest—July 2nd harvest—September). Total determined spectrophotometrically, acid by HPLC-DAD method. Varieties a colored (Magenta Love showed highest The level significantly (p < 0.05) affected total anthocyanins polyphenols potatoes. Early to medium early (Belana Love) increase during maturation, while other varieties, decreased due higher maturity. In terms possible positive effect health, consumption potatoes could be recommended.
